METHOD
Step 1.
Begin by preheating your oven to 220°C.Step 2.
Cut the potatoes into small, bite-sized pieces and place them on a baking tray. Drizzle with olive oil and season with salt and pepper. Mix well to ensure each piece is evenly coated.Step 3.
Bake the potatoes in the preheated oven for about 20-25 minutes, or until golden and crisp. Flip halfway through the cooking time to ensure even crispiness.Step 4.
While the potatoes are baking, prepare the Bravas sauce. In a pan, heat olive oil over medium heat. Add the finely chopped onion and minced garlic, sautéing until soft and translucent.Step 5.
Stir in the smoked paprika, hot chilli powder, and flour, cooking for a couple of minutes.Step 6.
Gradually pour in the can of chopped tomatoes, followed by the vinegar. Simmer for about 10-15 minutes until the sauce thickens. Season with salt and pepper to taste.Step 7.
Once the potatoes are baked and crispy, transfer them to a serving plate. Pour the hot Bravas sauce over the potatoes, and if desired, top with chopped parsley for a fresh contrast.Step 8.
Serve immediately with an optional side of aioli for dipping.
