METHOD

  • Step 1.

Begin by preheating your oven to 220°C.
  • Step 2.

Cut the potatoes into small, bite-sized pieces and place them on a baking tray. Drizzle with olive oil and season with salt and pepper. Mix well to ensure each piece is evenly coated.
  • Step 3.

Bake the potatoes in the preheated oven for about 20-25 minutes, or until golden and crisp. Flip halfway through the cooking time to ensure even crispiness.
  • Step 4.

While the potatoes are baking, prepare the Bravas sauce. In a pan, heat olive oil over medium heat. Add the finely chopped onion and minced garlic, sautéing until soft and translucent.
  • Step 5.

Stir in the smoked paprika, hot chilli powder, and flour, cooking for a couple of minutes.
  • Step 6.

Gradually pour in the can of chopped tomatoes, followed by the vinegar. Simmer for about 10-15 minutes until the sauce thickens. Season with salt and pepper to taste.
  • Step 7.

Once the potatoes are baked and crispy, transfer them to a serving plate. Pour the hot Bravas sauce over the potatoes, and if desired, top with chopped parsley for a fresh contrast.
  • Step 8.

Serve immediately with an optional side of aioli for dipping.
