METHOD
Step 1.
Combine all the spices, chillies, garlic, and ginger in a food processor to make the jerk marinade.Step 2.
Mix in the soy sauce and lime juice to the marinade for a balanced flavour.Step 3.
Score the chicken pieces and coat them thoroughly with the marinade. Let it marinate in the fridge for at least 2 hours, preferably overnight.Step 4.
Preheat your grill to a medium-high temperature and oil the grates to prevent sticking.Step 5.
Grill the chicken, turning occasionally, until it is cooked through and the skin is crisp and charred, about 35-45 minutes. Internal temperature should reach 74°C.Step 6.
Serve the jerk chicken hot, garnished with lime wedges and fresh coriander.Step 7.
