METHOD

  • Step 1.

    Preheat your oven to 200°C.
  • Step 2.

    In a bowl, mix the softened butter with garlic, chilli flakes, lemon zest, and chopped coriander. Season with salt and pepper to taste.
  • Step 3.

    Rub the butter mixture thoroughly over the chicken legs, ensuring each piece is generously coated.
  • Step 4.

    Arrange the chicken legs on a baking tray and roast in the preheated oven for about 45 minutes, or until the skin is crispy and golden, and the chicken is fully cooked.
  • Step 5.

    While the chicken is roasting, bring a large pot of salted water to a boil. Add the corn on the cob and cook for about 10 minutes, or until tender.
  • Step 6.

    Serve the crispy chilli butter chicken legs with the boiled corn on the cob, garnish with additional chilli flakes if desired.
