METHOD
Step 1.
Preheat your oven to 200°C.Step 2.
In a bowl, mix the softened butter with garlic, chilli flakes, lemon zest, and chopped coriander. Season with salt and pepper to taste.Step 3.
Rub the butter mixture thoroughly over the chicken legs, ensuring each piece is generously coated.Step 4.
Arrange the chicken legs on a baking tray and roast in the preheated oven for about 45 minutes, or until the skin is crispy and golden, and the chicken is fully cooked.Step 5.
While the chicken is roasting, bring a large pot of salted water to a boil. Add the corn on the cob and cook for about 10 minutes, or until tender.Step 6.
Serve the crispy chilli butter chicken legs with the boiled corn on the cob, garnish with additional chilli flakes if desired.
