Classic Millionaire Shortbread Recipe

METHOD

  • Step 1.

    Preheat oven to 180°C. Line a 20cm square baking tin with parchment paper.
  • Step 2.

    For the shortbread layer, beat 225g unsalted butter and 80g caster sugar until fluffy. Mix in 300g plain flour until a dough forms. Press into the bottom of the tin and bake for 20 minutes until pale golden. Let cool.
  • Step 3.

    For the caramel, combine 175g unsalted butter, 175g soft dark brown sugar, and 397g of condensed milk in a saucepan. Stir over low heat until the sugar has dissolved. Increase the heat and boil for about 5 minutes, stirring constantly, until the mixture has thickened. Pour over the cooled shortbread and leave to cool, then chill in fridge until set.
  • Step 4.

    For the chocolate layer, melt 200g dark chocolate and 100g milk chocolate together. Spread over the chilled caramel and let set. Cut into squares.
  • Step 5.

    Chill the slices in the fridge for at least 2 hours before serving.
