Mini Apple & Rhubarb Pies Recipe

Mini apple and rhubarb pies are the perfect little treats, easy to make and totally delicious.

METHOD

  • Step 1.

    Preheat your oven to 200°C (180°C fan)
  • Step 2.

    In a pan, melt the butter and add apples, rhubarb, sugar, cinnamon, nutmeg, and lemon juice. Cook until the fruit is tender
  • Step 3.

    Set the fruit aside to cool while you prepare the pastry
  • Step 4.

    Roll out your pastry and line your mini pie tins
  • Step 5.

    Spoon the apple and rhubarb mixture into your pastry-lined tins
  • Step 6.

    Top each with a pastry lid and brush with milk
  • Step 7.

    Bake for 20-25 minutes or until the pies are golden
  • Step 8.

    Leave to cool before serving.

  1. 2 Bramley apples

  2. 2 Rhubarb stalks

  3. 200 gCaster sugar

  4. 50 gButter

  5. 500 gReady made shortcrust pastry

  6. 1 tspGround cinnamon

  7. 0.5 tspGround nutmeg

  8. 2 tbspMilk

  9. 1 tbspLemon juice
