METHOD
Step 1.
Preheat your oven to 180°C and prepare your muffin tray by lining it with paper liners.Step 2.
In a bowl, mix together the flour, baking powder, cinnamon and salt.Step 3.
In a separate bowl, cream together the butter and sugar until light and fluffy, then add the eggs one at a time. Mix in the coffee.Step 4.
Gradually add in the flour mix, stirring until just combined.Step 5.
Divide the batter evenly among the muffin cups and bake for 20-25 minutes until a toothpick inserted comes out clean.Step 6.
While the muffins are baking, make the meringue icing by beating the egg whites until stiff peaks form, then gradually add in the sugar, continuing to beat until the mixture is glossy.Step 7.
Once the muffins are baked, let them cool completely before topping them with the meringue icing. Sprinkle with the chocolate shavings and enjoy!
