Classic Carrot Cake Recipe

METHOD
Step 1.
Preheat your oven to 350°F (175°C). Grease and flour a 9-13 inch cake tinStep 2.
In a large bowl, beat together eggs, oil, white sugar, and 2 teaspoons vanilla extract. Mix in flour, baking soda, baking powder, salt, and cinnamon. Stir in carrots. Pour into prepared tin.Step 3.
Bake in the oven for 40 to 50 minutes, or until a toothpick inserted into the centre of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.Step 4.
To make the frosting: In a medium bowl, combine butter, cream cheese, icing sugar, and 1 teaspoon vanilla extract. Beat until the mixture is smooth and creamy. Frost the cooled cake. Top with the crushed hazelnuts.
