Classic Carrot Cake Recipe

This classic carrot cake is moist, perfectly-spiced and made with a homemade cream cheese frosting. A timeless dessert that's always a hit at parties and gatherings.

METHOD

  • Step 1.

    Preheat your oven to 350°F (175°C). Grease and flour a 9-13 inch cake tin
  • Step 2.

    In a large bowl, beat together eggs, oil, white sugar, and 2 teaspoons vanilla extract. Mix in flour, baking soda, baking powder, salt, and cinnamon. Stir in carrots. Pour into prepared tin.
  • Step 3.

    Bake in the oven for 40 to 50 minutes, or until a toothpick inserted into the centre of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
  • Step 4.

    To make the frosting: In a medium bowl, combine butter, cream cheese, icing sugar, and 1 teaspoon vanilla extract. Beat until the mixture is smooth and creamy. Frost the cooled cake. Top with the crushed hazelnuts.
