METHOD
Step 1.
Wash and tear the lettuce into bite-sized pieces and place in a large salad bowl.Step 2.
Thinly slice the spring onions, and add to the bowl with the lettuce.Step 3.
In a small jar, combine the vinegar, honey, and mustard. Shake well until the dressing is emulsified.Step 4.
Drizzle the dressing over the salad and toss gently to combine.Step 5.
Sprinkle the sunflower seeds and pickled rhubarb over the top just before serving.Step 6.
