METHOD

  • Step 1.

    Preheat your oven to 180°C (350°F, gas mark 4).
  • Step 2.

    Line a baking sheet with parchment paper.
  • Step 3.

    In a large bowl, mix together 100g plain flour, 1 tsp baking powder, 1 tbsp ground ginger, and a pinch of salt.
  • Step 4.

    In a separate bowl, cream together 50g brown sugar and 50g unsalted butter until light and fluffy.
  • Step 5.

    Add 1 beaten egg to the sugar and butter mixture and mix well.
  • Step 6.

    Gradually combine the dry ingredients into the wet mixture until a dough forms.
  • Step 7.

    Fold in 75g crushed honeycomb pieces.
  • Step 8.

    Roll the dough out and cut into desired shapes and place on the prepared baking sheet, leaving space between each one.

    Bake for 10-12 minutes or until golden brown.

    Allow the biscuits to cool on a wire rack.

    In a heatproof bowl over a pan of simmering water, melt 100g dark chocolate, stirring occasionally.

    Once melted, drizzle the chocolate over the cooled biscuits using a fork.

    Let the chocolate set before serving.
