METHOD
Step 1.
Preheat your oven to 180°C (350°F, gas mark 4).Step 2.
Line a baking sheet with parchment paper.Step 3.
In a large bowl, mix together 100g plain flour, 1 tsp baking powder, 1 tbsp ground ginger, and a pinch of salt.Step 4.
In a separate bowl, cream together 50g brown sugar and 50g unsalted butter until light and fluffy.Step 5.
Add 1 beaten egg to the sugar and butter mixture and mix well.Step 6.
Gradually combine the dry ingredients into the wet mixture until a dough forms.Step 7.
Fold in 75g crushed honeycomb pieces.Step 8.
Roll the dough out and cut into desired shapes and place on the prepared baking sheet, leaving space between each one.Step 9.
Bake for 10-12 minutes or until golden brown.Step 10.
Allow the biscuits to cool on a wire rack.Step 11.
In a heatproof bowl over a pan of simmering water, melt 100g dark chocolate, stirring occasionally.Step 12.
Once melted, drizzle the chocolate over the cooled biscuits using a fork.Step 13.
Let the chocolate set before serving.
