Grilled Corn Topped With Cheese Recipe

A delightfully simple recipe for spicy char-grilled corn on the cob, topped with parmesan, parsley and lime. perfect for summer barbecues or side dish.

METHOD

  • Step 1.

    Preheat your grill to a medium-high heat.
  • Step 2.

    Peel back the corn husks, leaving them attached at the base. Remove the silk threads from each cob and then rewrap the corn in the husks. Soak the cobs with their husks in water for 10 minutes.
  • Step 3.

    Combine soft butter, chilli flakes, paprika, salt, and black pepper in a bowl.
  • Step 4.

    Carefully pull back the husks (dry them if necessary) and brush the corn generously with the butter mixture. Re-cover the corn with the husks.
  • Step 5.

    Place the corn on the grill, turning occasionally. Grill for about 15-20 minutes or until the corn is tender when poked with a fork.
  • Step 6.

    Remove the husks and serve the corn hot, with sprinkling of parmesan cheese, chilli powder, chopped parsley and a squeeze of lime.

  4. 0.25 tspHimalayan pink salt

  5. 0.25 tspBlack pepper

  6. 2 tspChilli flakes

  7. 1 Lime

  8. 0.5 tspChilli powder

  9. 1 tbspParsley

  10. 2 tbspParmesan cheese
