These juicy and colourful vegan barbecue skewers are perfect for a summer cookout. They're packed full of flavour from a zesty marinade, featuring a myriad of fresh vegetables.

METHOD

  • Step 1.

    Chop all the vegetables into roughly equal-sized pieces.
  • Step 2.

    Combine olive oil, balsamic vinegar, garlic, basil, salt, and pepper in a bowl. Stir until smooth.
  • Step 3.

    Add the vegetables to the bowl and mix to coat them with the marinade. Leave in the fridge for at least 30 minutes.
  • Step 4.

    Thread the marinated vegetables onto the skewers, alternating the types for variety.
  • Step 5.

    Cook the skewers on a hot barbecue for 15-20 minutes. Turn them regularly to ensure they cook evenly.
  • Step 6.

    Serve the skewers hot with a drizzle of the remaining marinade.
