Herb-Crusted Lamb Rack Recipe

METHOD
Step 1.
Preheat your oven to 200°C.Step 2.
Pat dry the lamb racks and season with salt and pepper to taste.Step 3.
In a bowl, mix together the breadcrumbs, rosemary, thyme, parsley, garlic, and 2 tbsp of olive oil.Step 4.
Heat the remaining olive oil in a skillet over high heat. Add the lamb racks, fat side down, and sear until golden, about 3 to 4 minutes.Step 5.
Remove the lamb from the skillet and let it cool slightly. Apply the mustard evenly on the fat side of each rack.Step 6.
Press the breadcrumb herb mixture onto the mustard layer.Step 7.
Place the lamb racks on a roasting tray and roast in the preheated oven until the crust is golden and the lamb is cooked to your preference (around 20 to 25 minutes for medium-rare).Step 8.
Let the lamb rest for 10 minutes before slicing between the ribs and serving.
