Herb-Crusted Lamb Rack Recipe

Savour the delectable taste of this herb-crusted lamb rack, perfect for a special occasion or a cosy dinner at home.





  • Step 1.

    Preheat your oven to 200°C.
  • Step 2.

    Pat dry the lamb racks and season with salt and pepper to taste.
  • Step 3.

    In a bowl, mix together the breadcrumbs, rosemary, thyme, parsley, garlic, and 2 tbsp of olive oil.
  • Step 4.

    Heat the remaining olive oil in a skillet over high heat. Add the lamb racks, fat side down, and sear until golden, about 3 to 4 minutes.
  • Step 5.

    Remove the lamb from the skillet and let it cool slightly. Apply the mustard evenly on the fat side of each rack.
  • Step 6.

    Press the breadcrumb herb mixture onto the mustard layer.
  • Step 7.

    Place the lamb racks on a roasting tray and roast in the preheated oven until the crust is golden and the lamb is cooked to your preference (around 20 to 25 minutes for medium-rare).
  • Step 8.

    Let the lamb rest for 10 minutes before slicing between the ribs and serving.
