Succulent Rosemary & Garlic Roast Lamb Recipe
A traditional roast lamb that blends the aromatic flavours of rosemary and garlic, perfect for a sumptuous Sunday dinner.

METHOD
Step 1.
Preheat your oven to 200°C (400°F, Gas Mark 6).Step 2.
Make small incisions all over the lamb with a sharp knife.Step 3.
Peel and slice the garlic cloves. Insert garlic slices and rosemary sprigs into the incisions.Step 4.
Rub the lamb all over with olive oil and season generously with salt and pepper.Step 5.
Place the lamb in a roasting tin and into the preheated oven.Step 6.
Roast for 20 minutes, then reduce the oven temperature to 180°C (350°F, Gas Mark 4).Step 7.
Continue roasting for approximately 2 hours, or until the meat is cooked to your liking.Step 8.
Halfway through, add the peeled and halved onions around the lamb in the roasting tin, basting with the juices.Step 9.
Remove from the oven and let it rest for 10-15 minutes before carving.Step 10.
Serve with the roasted onions and the cooking juices poured over the lamb, or use it to make a gravy.
