Homemade Blackcurrant Cordial Recipe

METHOD
Step 1.
Wash the blackcurrants and drain thoroughly.Step 2.
Place blackcurrants in a large saucepan and just cover with water. Cook until the blackcurrants have popped and are soft.Step 3.
Strain the juice through a fine-mesh sieve, pressing the blackcurrants to extract all the juice.Step 4.
Return the juice to the saucepan, discard the remaining blackcurrants.Step 5.
Add sugar to taste.Step 6.
Heat gently, stirring until the sugar has dissolved fully.Step 7.
Increase the heat slightly and simmer for 5-10 minutes, until the juice has reduced and become syrupy.Step 8.
Remove from the heat, let cool and add the lemon juice.Step 9.
Once cooled, pour into sterilised bottles. Store it in the fridge.
