Homemade Blackcurrant Cordial Recipe

METHOD

  • Step 1.

    Wash the blackcurrants and drain thoroughly.
  • Step 2.

    Place blackcurrants in a large saucepan and just cover with water. Cook until the blackcurrants have popped and are soft.
  • Step 3.

    Strain the juice through a fine-mesh sieve, pressing the blackcurrants to extract all the juice.
  • Step 4.

    Return the juice to the saucepan, discard the remaining blackcurrants.
  • Step 5.

    Add sugar to taste.
  • Step 6.

    Heat gently, stirring until the sugar has dissolved fully.
  • Step 7.

    Increase the heat slightly and simmer for 5-10 minutes, until the juice has reduced and become syrupy.
  • Step 8.

    Remove from the heat, let cool and add the lemon juice.
  • Step 9.

    Once cooled, pour into sterilised bottles. Store it in the fridge.
