METHOD
Step 1.
Begin by preheating your oven to 180°C (350°F).Step 2.
To make the pastry, sift 225g of plain flour into a large mixing bowl. Add a pinch of salt for flavour.Step 3.
Cut 125g of cold unsalted butter into small cubes and add them to the flour. Gently rub the flour and butter together with your fingertips until the mixture resembles fine breadcrumbs.Step 4.
Stir in 2 tbsp of caster sugar to sweeten the mixture.Step 5.
Gradually add 2-3 tbsp of cold water, mixing until the dough comes together to form a ball. Be careful not to overwork the dough.Step 6.
Roll out the dough on a lightly floured surface until about 3mm thick.Step 7.
Using a round cutter, cut out 12 circles and press them gently into a tart tray.Step 8.
Spoon your favourite jam into the centre of each pastry circle. Strawberry, raspberry, and apricot work wonderfully.Step 9.
Bake in the preheated oven for 15-20 minutes, or until the pastry is golden and crisp.Step 10.
Allow to cool in the tray for a few minutes before transferring to a wire rack to cool completely.Step 11.
