Lemon Macaroons Recipe
These Lemon Macaroons are a zesty twist on a classic French treat, with a burst of sunshine in every bite.

METHOD
Step 1.
Preheat your oven to 150°C (130°C fan) mark 3 and line two baking sheets with baking parchment.Step 2.
Whisk egg whites until stiff. Add caster sugar and whizz until the mixture is thick and glossy.Step 3.
Mix ground almonds, icing sugar and lemon zest together in a separate bowl. Fold this mix into the egg white mix.Step 4.
Spoon mixture into a piping bag and pipe 3cm rounds onto baking sheets. Leave for 20 mins to form a skin.Step 5.
Bake for 15-18 mins, then cool on the baking sheets. Sandwich pairs of macaroons together with lemon curd.
