Lemon Macaroons Recipe

These Lemon Macaroons are a zesty twist on a classic French treat, with a burst of sunshine in every bite.

METHOD

  • Step 1.

    Preheat your oven to 150°C (130°C fan) mark 3 and line two baking sheets with baking parchment.
  • Step 2.

    Whisk egg whites until stiff. Add caster sugar and whizz until the mixture is thick and glossy.
  • Step 3.

    Mix ground almonds, icing sugar and lemon zest together in a separate bowl. Fold this mix into the egg white mix.
  • Step 4.

    Spoon mixture into a piping bag and pipe 3cm rounds onto baking sheets. Leave for 20 mins to form a skin.
  • Step 5.

    Bake for 15-18 mins, then cool on the baking sheets. Sandwich pairs of macaroons together with lemon curd.
