METHOD
Step 1.
Start by cooking the farfalle pasta in a large pot of salted boiling water according to the package instructions until al dente. Once cooked, drain and rinse under cold water to stop the cooking process then set aside.Step 2.
For the homemade green pesto, in a food processor blend together fresh basil leaves, pine nuts, grated Parmesan cheese, garlic cloves, and extra virgin olive olive oil until smooth. Season with salt and pepper to taste.Step 3.
Chop the fresh tomatoes into quarters.Step 4.
In a large mixing bowl, combine the cooked pasta, green pesto, and chopped tomatoes. Gently stir until all the ingredients are well mixed.Step 5.
Let the salad chill in the refrigerator for at least 20 minutes before serving to allow the flavours to meld together.Step 6.
Serve chilled, garnished with additional basil leaves or grated Parmesan if desired.
