METHOD

  • Step 1.

    Start by cooking the farfalle pasta in a large pot of salted boiling water according to the package instructions until al dente. Once cooked, drain and rinse under cold water to stop the cooking process then set aside.
  • Step 2.

    For the homemade green pesto, in a food processor blend together fresh basil leaves, pine nuts, grated Parmesan cheese, garlic cloves, and extra virgin olive olive oil until smooth. Season with salt and pepper to taste.
  • Step 3.

    Chop the fresh tomatoes into quarters.
  • Step 4.

    In a large mixing bowl, combine the cooked pasta, green pesto, and chopped tomatoes. Gently stir until all the ingredients are well mixed.
  • Step 5.

    Let the salad chill in the refrigerator for at least 20 minutes before serving to allow the flavours to meld together.
  • Step 6.

    Serve chilled, garnished with additional basil leaves or grated Parmesan if desired.
