A refreshingly light yet flavourful salad combining the sweet zest of orange, the crisp freshness of mint and carrot, complemented by the rich notes of Kalamata olives and crisp lettuce.

METHOD

  • Step 1.

    Tear the lettuce leaves into bite-size pieces and place them in a large salad bowl.
  • Step 2.

    Peel the carrots and slice them finely before adding them to the bowl.
  • Step 3.

    Slice the oranges into segments carefully to avoid the pith. Add them to the salad bowl.
  • Step 4.

    Chop the mint leaves roughly and sprinkle over the salad.
  • Step 5.

    Add the Kalamata olives to the bowl; you can slice them if preferred or leave them whole for a stronger flavour presence.
  • Step 6.

    In a small bowl, whisk together the olive oil, lemon juice, a pinch of salt, and some freshly ground black pepper. Adjust the seasoning according to taste.
  • Step 7.

    Pour the dressing over the salad and toss gently to ensure all the ingredients are well coated.
  • Step 8.

    Serve immediately, or cover and refrigerate for up to 2 hours before serving to allow the flavours to meld.
