Honey & Lemon Loaf Cake Recipe

METHOD
Step 1.
Preheat your oven to 180°C (356°F). Grease and line a loaf tin with parchment paper.Step 2.
In a mixing bowl, cream together 150g of unsalted butter with 100g of caster sugar until light and fluffy.Step 3.
Beat in 2 large eggs, one at a time, ensuring each is well incorporated before adding the next.Step 4.
Fold in the grated zest of 1 lemon and 1 tbsp of lemon juice.Step 5.
In a separate bowl, sift together 200g of self-raising flour and a pinch of salt.Step 6.
Alternately fold the dry ingredients and 4 tbsp of milk into the butter mixture, starting and ending with the dry ingredients.Step 7.
Stir in 3 tbsp of honey, mixing until just combined.Step 8.
Pour the batter into the prepared loaf tin and smooth the top with a spatula.Step 9.
Bake in the preheated oven for 40 minutes, or until a skewer inserted into the centre comes out clean.Step 10.
Allow to cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely.Step 11.
For the glaze, whisk together 2 tbsp of lemon juice and 5 tbsp of icing sugar until smooth. Drizzle over the cooled cake.Step 12.
Slice and serve the cake once the glaze has set.Step 13.
