Rhubarb Gin Fizz Recipe

METHOD
Step 1.
Begin by making the rhubarb syrup. In a saucepan, combine rhubarb pieces, sugar, and water. Bring to a simmer over medium heat, stirring until the sugar dissolves. Cook for about 10 minutes until rhubarb is soft and the mixture has thickened. Strain through a fine sieve, pressing on the solids. Allow to cool.Step 2.
In a cocktail shaker, mix the rhubarb syrup with gin, lemon juice, and egg white. Shake well until the mixture is frothy.Step 3.
Fill a glass halfway with ice. Pour the cocktail mixture into the glass.Step 4.
Top up with soda water. Stir gently to combine.Step 5.
Garnish with a sprig of mint or a thin slice of rhubarb before serving.
