Sloe & Vanilla Gin Recipe
A fun twist on the classic gin, using sloes and a touch of vanilla to create a tart and warming drink. A bottle of this fine gin would make the perfect gift this winter.

METHOD
Step 1.
Wash and dry the sloes, then freeze them overnight, or until solid.Step 2.
Remove the sloes from the freezer, then use a fork to prick each one several times.Step 3.
Place the sloes and the whole vanilla pod into a large, sterilised Kilner jar or any airtight container.Step 4.
Pour the gin and sugar over the sloes and vanilla, then seal and shake well.Step 5.
Store the gin in a cool, dark place and shake every other day for a week, then shake once a week for at least two months.Step 6.
Strain the gin through a muslin cloth and decant into a bottle.Step 7.
The gin can be served immediately but will improve with age – try to wait at least three months before drinking.
