Homemade Elderflower Cordial Recipe
This fragrant, citrusy cordial is perfect to brighten up your day. Refreshing and flavourful, it takes time to make, but is totally worth it!

METHOD
Step 1.
Place elderflower heads in a large bowl.Step 2.
Place sugar and water in pan, heat gently until sugar has dissolved. Bring to boil and simmer for 2 minutes.Step 3.
Pour syrup over the elderflower heads.Step 4.
Add lemon zest and juice. Cover with a clean tea towel and leave at room temperature for 24 hours.Step 5.
Squeeze the juice out of the elderflower heads and discard.Step 6.
Strain the liquid through a fine sieve or muslin cloth.Step 7.
Pour the cordial into sterilised bottles. Seal the bottles with swing-top lids or rubber bungs.Step 8.
Once opened, store in the fridge. It will last up to 6 weeks.

1.5 kgCaster sugar
1.5 lWater
3 Lemons
50 gCitric acid
