Spiced Mango Cupcakes with Buttercream Frosting Recipe

METHOD
Step 1.
Preheat your oven to 180 degrees Celsius and line your muffin tin with cupcake cases.Step 2.
In a medium bowl, combine the flour, baking powder, salt, and spices. Set aside.Step 3.
In a large bowl, beat the butter with sugar until light and fluffy.Step 4.
Beat in the eggs, one at the time, adding the vanilla extract after.Step 5.
Fold in the dry ingredients, alternating with the mango puree.Step 6.
Spoon the batter into prepared muffin cups almost to the top and bake for about 25 minutes or until the cupcakes spring back when pressed lightly in the centre.Step 7.
Allow the cupcakes to cool in the tin for 10 minutes, then transfer to wire racks to cool completely.Step 8.
To make the frosting, beat the butter with powdered sugar and vanilla extract until creamy. Gradually add the cream and continue beating until the frosting is fluffy.Step 9.
Pipe the frosting on the top of the cupcakes once they are completely cooled.Step 10.
Sprinkle with cinnamon and nutmeg and then top with a dried mango slice.
