METHOD

  • Step 1.

Preheat the oven to 180 degrees Celsius (160 for fan ovens), Gas Mark 4.
  • Step 2.

In a big mixing bowl, cream together butter and sugars until light and fluffy.
  • Step 3.

Beat in the egg, followed by the vanilla extract.
  • Step 4.

In a separate bowl, combine the flour, cocoa powder, baking powder and a pinch of salt.
  • Step 5.

Gradually add this dry mixture to the wet mixture, combining as you go.
  • Step 6.

Stir in the grated dark chocolate.
  • Step 7.

Roll out the dough on a clean surface and cut into shapes using a small cookie cutter. Then place them on a lined baking tray, making sure to leave enough room for the biscuits to spread out. Cook in batches if you don't have enough room on the baking tray.
  • Step 8.

Bake in the preheated oven for about 10-12 minutes, or until firm on the edges but still soft in the middle.
  • Step 9.

Leave biscuits to cool on the trays for 10 minutes before transferring them to a wire rack to cool completely.
  • Step 10.

Serve alongside a cup of tea or glass of milk.
