
Dark Chocolate Biscuits Recipe

METHOD
- Step 1.Preheat the oven to 180 degrees Celsius (160 for fan ovens), Gas Mark 4.
- Step 2.In a big mixing bowl, cream together butter and sugars until light and fluffy.
- Step 3.Beat in the egg, followed by the vanilla extract.
- Step 4.In a separate bowl, combine the flour, cocoa powder, baking powder and a pinch of salt.
- Step 5.Gradually add this dry mixture to the wet mixture, combining as you go.
- Step 6.Stir in the grated dark chocolate.
- Step 7.Roll out the dough on a clean surface and cut into shapes using a small cookie cutter. Then place them on a lined baking tray, making sure to leave enough room for the biscuits to spread out. Cook in batches if you don't have enough room on the baking tray.
- Step 8.Bake in the preheated oven for about 10-12 minutes, or until firm on the edges but still soft in the middle.
- Step 9.Leave biscuits to cool on the trays for 10 minutes before transferring them to a wire rack to cool completely.
- Step 10.Serve alongside a cup of tea or glass of milk.
