METHOD
Step 1.
Preheat the oven to 180 degrees Celsius (160 for fan ovens), Gas Mark 4.Step 2.
In a big mixing bowl, cream together butter and sugars until light and fluffy.Step 3.
Beat in the egg, followed by the vanilla extract.Step 4.
In a separate bowl, combine the flour, cocoa powder, baking powder and a pinch of salt.Step 5.
Gradually add this dry mixture to the wet mixture, combining as you go.Step 6.
Stir in the grated dark chocolate.Step 7.
Roll out the dough on a clean surface and cut into shapes using a small cookie cutter. Then place them on a lined baking tray, making sure to leave enough room for the biscuits to spread out. Cook in batches if you don't have enough room on the baking tray.Step 8.
Bake in the preheated oven for about 10-12 minutes, or until firm on the edges but still soft in the middle.Step 9.
Leave biscuits to cool on the trays for 10 minutes before transferring them to a wire rack to cool completely.Step 10.
Serve alongside a cup of tea or glass of milk.
