Ginger Muffins Recipe

METHOD
Step 1.
Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.Step 2.
In a bowl, whisk together the flour, baking powder, ground ginger, cinnamon, and salt.Step 3.
In another bowl, beat the butter and brown sugar until creamy.Step 4.
Add the egg, syrup, and grated fresh ginger. Mix until well combined.Step 5.
Gradually add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.Step 6.
Fold in the chopped crystallized ginger.Step 7.
Divide the batter evenly among the muffin cups, filling each about two-thirds full.Step 8.
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.Step 9.
Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring to a wire rack to cool completely.Step 10.
Dust the ginger muffins with a little icing sugar. Serve and enjoy!
