Mexican Pastry Tarts Recipe
Delicious Mexican tartlets filled with sweetcorn, beans, tomatoes, and cheese, served with a fresh topping of avocado, lime, and parsley.

METHOD
Step 1.
Preheat the oven to 200 degrees Celsius.Step 2.
In a bowl, combine the beans, sweetcorn, tomatoes, and cheese.Step 3.
Roll out the pastry and cut into circles, then place into mini tart tins.Step 4.
Fill the pastry tarts with the vegetable-cheese mixture.Step 5.
Bake for 10-15 minutes, or until pastry is golden and crispy.Step 6.
While the tarts are in the oven, prepare the topping by peeling and slicing the avocado, squeeze the lime, and pull the parsley leaves from the stalks.Step 7.
Once tarts are done, add a few slices of the avocado squeeze over the lime and garnish with a parsley leaf and a sprinkle of chilli flakes.Step 8.
Serve warm and enjoy!
