Mexican Pastry Tarts Recipe

Delicious Mexican tartlets filled with sweetcorn, beans, tomatoes, and cheese, served with a fresh topping of avocado, lime, and parsley.

METHOD

  • Step 1.

    Preheat the oven to 200 degrees Celsius.
  • Step 2.

    In a bowl, combine the beans, sweetcorn, tomatoes, and cheese.
  • Step 3.

    Roll out the pastry and cut into circles, then place into mini tart tins.
  • Step 4.

    Fill the pastry tarts with the vegetable-cheese mixture.
  • Step 5.

    Bake for 10-15 minutes, or until pastry is golden and crispy.
  • Step 6.

    While the tarts are in the oven, prepare the topping by peeling and slicing the avocado, squeeze the lime, and pull the parsley leaves from the stalks.
  • Step 7.

    Once tarts are done, add a few slices of the avocado squeeze over the lime and garnish with a parsley leaf and a sprinkle of chilli flakes.
  • Step 8.

    Serve warm and enjoy!
