Apple & Rhubarb Muffins Recipe

METHOD

  • Step 1.

    Preheat your oven to 180°C (350°F). Line a muffin tin with paper liners.
  • Step 2.

    In a large mixing bowl, combine the flour, baking powder, and cinnamon.
  • Step 3.

    In another bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time.
  • Step 4.

    Fold the dry ingredients into the wet ingredients alternately with the milk, beginning and ending with the dry ingredients. Do not overmix.
  • Step 5.

    Gently fold in the diced apple and sliced rhubarb.
  • Step 6.

    Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.
  • Step 7.

    Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Step 8.

    Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • Step 9.

    For the icing, whisk together the icing sugar and milk until smooth. Drizzle over the cooled muffins.
  • Step 10.

  9. 1 cupSliced rhubarb

  10. 100 gIcing sugar

  11. 2 tbspMilk, for icing
