Apple & Rhubarb Muffins Recipe

METHOD
Step 1.
Preheat your oven to 180°C (350°F). Line a muffin tin with paper liners.Step 2.
In a large mixing bowl, combine the flour, baking powder, and cinnamon.Step 3.
In another bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time.Step 4.
Fold the dry ingredients into the wet ingredients alternately with the milk, beginning and ending with the dry ingredients. Do not overmix.Step 5.
Gently fold in the diced apple and sliced rhubarb.Step 6.
Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full.Step 7.
Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.Step 8.
Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.Step 9.
For the icing, whisk together the icing sugar and milk until smooth. Drizzle over the cooled muffins.Step 10.
