METHOD

  • Step 1.

    Preheat your oven to 170°C (gas mark 3) and grease a large, deep baking tray.
  • Step 2.

    In a mixing bowl, combine the oil, eggs, sugar, spices, and vanilla extract until smooth.
  • Step 3.

    Stir in the grated carrots, sultanas and orange zest. Add the self-rising flour and mix until well combined.
  • Step 4.

    Pour the mixture into your prepared baking tray and bake for 1 hour or until a skewer inserted into the centre of the cake comes out clean.
  • Step 5.

    While the cake is baking, prepare the icing by slowly adding the orange juice to the icing sugar until desired consistency is achieved. Stir until smooth.
  • Step 6.

    Once the cake has cooled, drizzle the icing evenly over the top. Sprinkle over the chopped hazelnuts.
  • Step 7.

    Cut into squares and enjoy!
