METHOD
Step 1.
Preheat your oven to 170°C (gas mark 3) and grease a large, deep baking tray.Step 2.
In a mixing bowl, combine the oil, eggs, sugar, spices, and vanilla extract until smooth.Step 3.
Stir in the grated carrots, sultanas and orange zest. Add the self-rising flour and mix until well combined.Step 4.
Pour the mixture into your prepared baking tray and bake for 1 hour or until a skewer inserted into the centre of the cake comes out clean.Step 5.
While the cake is baking, prepare the icing by slowly adding the orange juice to the icing sugar until desired consistency is achieved. Stir until smooth.Step 6.
Once the cake has cooled, drizzle the icing evenly over the top. Sprinkle over the chopped hazelnuts.Step 7.
Cut into squares and enjoy!
