Classic Humous Recipe
Tangy and creamy humous with a rich topping of smooth olive oil. This beloved Mediterranean dish is a great appetiser or snack.

METHOD
Step 1.
Soak chickpeas overnight in a large bowl of water, drained the next day.Step 2.
Boil the soaked chickpeas until they are tender.Step 3.
In a food processor, combine boiled chickpeas, tahini, lemon juice, garlic, and water. Blend until smooth.Step 4.
Taste the humous and add more garlic or lemon juice if needed. Season with salt as desired.Step 5.
Place the humous in a serving bowl and make a small well in the center. Pour olive oil into the well and garnish with parsley and paprika.Step 6.
Serve immediately with warm pita bread or cover and refrigerate for later.
