METHOD
Step 1.
Combine flour, baking soda and salt in a bowl.Step 2.
In a separate bowl, cream butter and sugar until fluffy. Add egg and vanilla extract, mixing well.Step 3.
Gradually add dry ingredients to the butter mixture until a dough forms.Step 4.
Chill dough for 1 hour in refrigerator.Step 5.
Preheat oven to 180°C (350°F) and line a baking tray.Step 6.
Roll out dough and use Christmas themed cookie cutters to cut shapes.Step 7.
Bake cookies for 10 minutes until golden, then allow to cool.Step 8.
For the icing, combine icing sugar with vanilla extract and a little water. Stir until it reaches a piping consistency.Step 9.
Pour icing into piping bag and decorate cookies once cooled. Let the icing set before serving.
