Sweet Pumpkin Muffins Recipe

These sweet pumpkin muffins are perfect for a chilly autumn day. Made with sweet pumpkin puree, warm spices and a dash of vanilla, these muffins are comforting, filling, and utterly delicious.

METHOD

  • Step 1.

    Preheat the oven to 180°C, and grease or line a muffin tin.
  • Step 2.

    In a large bowl, combine the flour, sugar, baking powder, bicarbonate of soda, spices and salt.
  • Step 3.

    In another bowl, combine the beaten eggs with the pumpkin puree, vegetable oil and vanilla extract.
  • Step 4.

    Gradually add the dry ingredients to the wet, stirring until just combined
  • Step 5.

    Spoon the batter into lined muffin tins, filling each case around two-thirds full
  • Step 6.

    Bake in the preheated oven for around 25-30 minutes, or until a toothpick comes out clean
  • Step 7.

    Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  • Step 8.

  9. 1 cupPumpkin puree

  10. 0.5 cupVegetable oil
