Sweet Pumpkin Muffins Recipe
These sweet pumpkin muffins are perfect for a chilly autumn day. Made with sweet pumpkin puree, warm spices and a dash of vanilla, these muffins are comforting, filling, and utterly delicious.

METHOD
Step 1.
Preheat the oven to 180°C, and grease or line a muffin tin.Step 2.
In a large bowl, combine the flour, sugar, baking powder, bicarbonate of soda, spices and salt.Step 3.
In another bowl, combine the beaten eggs with the pumpkin puree, vegetable oil and vanilla extract.Step 4.
Gradually add the dry ingredients to the wet, stirring until just combinedStep 5.
Spoon the batter into lined muffin tins, filling each case around two-thirds fullStep 6.
Bake in the preheated oven for around 25-30 minutes, or until a toothpick comes out cleanStep 7.
Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.Step 8.
