Festive Stollen Cake Recipe

METHOD

  • Step 1.

    Preheat the oven to 150 degrees Celsius, gas mark 2.
  • Step 2.

    In a bowl, mix together the flour, yeast, sugar, lemon zest, and spices.
  • Step 3.

    In another bowl, mix together the melted butter, lukewarm milk, and beaten egg.
  • Step 4.

    Combine the liquid ingredients with the dry ingredients and knead until you form a soft dough. Let the dough rest for 10 minutes.
  • Step 5.

    Add the dried fruits and almonds to the dough and knead again. Form the dough into an oval shape and fold it lengthways.
  • Step 6.

    Place the dough on a baking tray lined with baking parchment. Leave in a warm place for about 30 minutes.
  • Step 7.

    Bake the stollen for about 40 minutes until golden brown.
  • Step 8.

    Melt the some butter and brush over the hot stollen, then sprinkle with a generous amount of powdered sugar.

  3. 50 gCaster sugar

  4. 1 tbspLemon zest

  5. 1 tspGround mixed spice

  6. 200 gMelted butter

  7. 150 mlLukewarm milk

  8. 1 Beaten free-range egg

  9. 200 gDried mixed fruit

  10. 50 gFlaked almonds

  11. 2 tbspExtra butter, for brushing

  12. 50 gPowdered sugar, for dusting
