METHOD
Step 1.
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch cake pans.Step 2.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, mixing well after each. Combine the flour, baking powder, and salt; stir into the batter alternately with the milk. Blend in 2 shots of the coffee.Step 3.
Divide the batter evenly between the prepared pans.Step 4.
Bake for 25-30 minutes in the preheated oven, or until a toothpick inserted into the centre of the cake comes out clean. Let cool in pans for a few minutes, then remove from pans and transfer to a wire rack to cool completely.Step 5.
For the frosting, beat together the butter, Icing sugar, and the remaining coffee. If the frosting is too thick, add another splash of coffee to loosen it.Step 6.
Spread half of the frosting on one layer of the cooled cake. Top with the second layer of cake and spread with the remaining frosting. Sprinkle the top with chopped walnuts.
