METHOD
Step 1.
Preheat your oven to 180C/160C fan/gas 4 and grease your baking tray.Step 2.
Beat together the butter, sugar, flour, baking powder, eggs and lemon zest until it is smooth.Step 3.
Pour the mixture into the baking tray and smooth the top with a spatula.Step 4.
Bake for 35-40 minutes or until a skewer inserted into the middle comes out clean.Step 5.
While the cake bakes. In a bowl, stir together the lemon juice and icing sugar. Slowly add the liquid to the dry until the desired consistency is reached.Step 6.
Once the cake is out of the oven, let it cool completely and then drizzle the icing over the sponge.Step 7.
Allow the cake to cool in the tray, then slice into squares and serve.
