METHOD
Step 1.
Preheat your oven to 180°C (356°F). Grease a 23cm tart tin.Step 2.
In a large bowl, whisk together 150g caster sugar and 4 eggs until light and fluffy.Step 3.
Fold in 150g plain flour gently to keep the air in the mixture.Step 4.
Pour the sponge mixture into the prepared tart tin and smooth the top.Step 5.
Core and thinly slice 3 Golden Delicious apples. Arrange the apple slices on top of the sponge mixture in a circular pattern.Step 6.
Sprinkle 2 tbsp demerara sugar and 1 tsp ground cinnamon over the apples.Step 7.
Bake in the preheated oven for 35-40 minutes, or until the cake is golden and a toothpick inserted into the centre comes out clean.Step 8.
Let the tart cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.Step 9.
Dust with icing sugar before serving.
