Creamy Carrot Soup with Croutons Recipe

METHOD

  • Step 1.

    Peel and chop the carrots, onion and garlic.
  • Step 2.

    In a large pot, heat the olive oil over medium heat. Add the carrots, onion and garlic and cook until they begin to soften.
  • Step 3.

    Add the stock and bring the soup to a boil. Lower the heat and let it simmer for 30 minutes.
  • Step 4.

    In a blender, blend the soup until smooth. Return the soup to the pot.
  • Step 5.

    Stir in the heavy cream and season with salt and pepper.
  • Step 6.

    Prepare the croutons by cutting the bread into cubes. Toss them with olive oil and toast in the oven until golden.
  • Step 7.

    Serve the soup topped with croutons and a drizzle of garlic oil.
