Creamy Carrot Soup with Croutons Recipe

METHOD
Step 1.
Peel and chop the carrots, onion and garlic.Step 2.
In a large pot, heat the olive oil over medium heat. Add the carrots, onion and garlic and cook until they begin to soften.Step 3.
Add the stock and bring the soup to a boil. Lower the heat and let it simmer for 30 minutes.Step 4.
In a blender, blend the soup until smooth. Return the soup to the pot.Step 5.
Stir in the heavy cream and season with salt and pepper.Step 6.
Prepare the croutons by cutting the bread into cubes. Toss them with olive oil and toast in the oven until golden.Step 7.
Serve the soup topped with croutons and a drizzle of garlic oil.
