Lemon Chicken with Char Grilled Broccoli & Toasted Nuts Recipe

METHOD

  • Step 1.

    Preheat your grill to a medium-high heat.
  • Step 2.

    In a bowl, mix the juice of two lemons, 3 tbsp of olive oil, 2 minced garlic cloves, 1 tsp of dried oregano, salt, and pepper. Add 4 chicken breasts to the marinade and let sit for at least 15 minutes.
  • Step 3.

    For the char-grilled broccoli, cut 1 large head of broccoli into florets. Toss them with 2 tbsp of olive oil, salt, and pepper.
  • Step 4.

    Place the marinated chicken breasts onto the grill and top with the lemon slices. Grill for 6-7 minutes on each side or until fully cooked.
  • Step 5.

    At the same time, place broccoli florets on the grill. Cook for about 10 minutes, turning occasionally, until they are charred and tender.
  • Step 6.

    In a dry pan, toast the mixed nuts over medium heat until they are golden and fragrant. Chop and set aside.
  • Step 7.

    Finely chop the fresh parsley.
  • Step 8.

    Serve the grilled chicken and broccoli on a platter. Sprinkle with toasted nuts and chopped parsley.
