Colourful Citrus Salad with Fresh Fennel & Watermelon Radish Recipe

A refreshing, tangy salad combining citrusy oranges, spicy radishes and delicate pea shoots. Perfect for a healthy lunch or a light appetiser.

METHOD

  • Step 1.

    Start by slicing away the peel from the oranges and blood oranges. Saving the peels for later. Then slice the citrus flesh into discs and place them into a large bowl along with a sprinkle of sea salt to draw out the flavours.
  • Step 2.

    Trim the fennel and cut into thin strips. Add to the bowl.
  • Step 3.

    Thinly slice the watermelon radish into discs and then into strips add to the bowl.
  • Step 4.

    Toss the salad gently to combine all the ingredients.
  • Step 5.

    For the dressing, squeeze the juice from the citrus peels you saved, add a drizzle of olive oil, salt and pepper to taste. Shake well to combine.
  • Step 6.

    Drizzle the dressing over the salad just before serving.
  • Step 7.

    Finally, top the salad with the pea shoots and season with another crack of pepper.
