Colourful Citrus Salad with Fresh Fennel & Watermelon Radish Recipe
A refreshing, tangy salad combining citrusy oranges, spicy radishes and delicate pea shoots. Perfect for a healthy lunch or a light appetiser.

METHOD
Step 1.
Start by slicing away the peel from the oranges and blood oranges. Saving the peels for later. Then slice the citrus flesh into discs and place them into a large bowl along with a sprinkle of sea salt to draw out the flavours.Step 2.
Trim the fennel and cut into thin strips. Add to the bowl.Step 3.
Thinly slice the watermelon radish into discs and then into strips add to the bowl.Step 4.
Toss the salad gently to combine all the ingredients.Step 5.
For the dressing, squeeze the juice from the citrus peels you saved, add a drizzle of olive oil, salt and pepper to taste. Shake well to combine.Step 6.
Drizzle the dressing over the salad just before serving.Step 7.
Finally, top the salad with the pea shoots and season with another crack of pepper.
