METHOD
Step 1.
Cut the potatoes into cubes and place in a large pot of salted water. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 10 minutes.Step 2.
While the potatoes are boiling, whisk together mayonnaise, mustard, vinegar, salt, and pepper in a large bowl.Step 3.
Drain the potatoes and let them cool. Once the potatoes have cooled, add them to the mayonnaise mixture.Step 4.
Add the chopped dill, chives and spring onions to the bowl and mix gently to combine everything.Step 5.
Chill in the refrigerator for at least an hour before serving.
