METHOD

  • Step 1.

    Cut the potatoes into cubes and place in a large pot of salted water. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 10 minutes.
  • Step 2.

    While the potatoes are boiling, whisk together mayonnaise, mustard, vinegar, salt, and pepper in a large bowl.
  • Step 3.

    Drain the potatoes and let them cool. Once the potatoes have cooled, add them to the mayonnaise mixture.
  • Step 4.

    Add the chopped dill, chives and spring onions to the bowl and mix gently to combine everything.
  • Step 5.

    Chill in the refrigerator for at least an hour before serving.
