Pear, Beetroot and Lentil Salad Recipe
A vibrant, hearty salad packed full of nutritious ingredients. The sweet and slightly tart flavour of pear complements the earthy beetroot and hearty lentils, while the spicy punch of watercress adds a fresh touch.

METHOD
Step 1.
Cook lentils in boiling water until tender for around 20 minutes.Step 2.
Dice the beetroot, core and dice the pear and set aside in a bowl.Step 3.
Rinse the watercress with cold water, allow to drain.Step 4.
To make the dressing, whisk together 2 tbsp of olive oil, the lemon juice, salt and pepper.Step 5.
Combine the beetroot, cooked lentils, diced pear and watercress in a large bowl. Drizzle over the dressing and toss gently to combine.Step 6.
Serve immediately, or refrigerate until ready to serve.
