Pear, Beetroot and Lentil Salad Recipe

A vibrant, hearty salad packed full of nutritious ingredients. The sweet and slightly tart flavour of pear complements the earthy beetroot and hearty lentils, while the spicy punch of watercress adds a fresh touch.

METHOD

  • Step 1.

    Cook lentils in boiling water until tender for around 20 minutes.
  • Step 2.

    Dice the beetroot, core and dice the pear and set aside in a bowl.
  • Step 3.

    Rinse the watercress with cold water, allow to drain.
  • Step 4.

    To make the dressing, whisk together 2 tbsp of olive oil, the lemon juice, salt and pepper.
  • Step 5.

    Combine the beetroot, cooked lentils, diced pear and watercress in a large bowl. Drizzle over the dressing and toss gently to combine.
  • Step 6.

    Serve immediately, or refrigerate until ready to serve.

  2. 2 Pickled Beetroots

  3. 1 Crisp Pear

  4. 50 gWatercress

  5. 3 tbspOlive Oil

  6. 1 tbspLemon Juice

  7. 0.5 tspSalt

  8. 0.5 tspBlack Pepper, crushed
