Crispy Tofu & Rice Noodle Salad Recipe

A refreshing and flavourful salad combining rice noodles, crispy tofu, and vibrant vegetables, all tossed together with a zesty dressing.





  • Step 1.

    Begin by preparing the rice noodles as per the package instructions, then rinse under cold water and set aside.
  • Step 2.

    In a non-stick pan, fry the diced tofu pieces over medium heat until each side turns golden and crispy. Set aside on kitchen paper to drain excess oil.
  • Step 3.

    Thinly slice the red peppers and spring onions, and chop the parsley.
  • Step 4.

    In a large mixing bowl, combine the rice noodles, sliced red peppers, spring onions, crispy tofu, and parsley.
  • Step 5.

    For the dressing, whisk together soy sauce, lime juice, minced garlic, and a pinch of sugar, adjusting to taste.
  • Step 6.

    Pour the dressing over the salad and gently toss to combine.
  • Step 7.

    Garnish the salad with sesame seeds and nigella seeds just before serving.
