METHOD
Step 1.
Begin by preparing the rice noodles as per the package instructions, then rinse under cold water and set aside.Step 2.
In a non-stick pan, fry the diced tofu pieces over medium heat until each side turns golden and crispy. Set aside on kitchen paper to drain excess oil.Step 3.
Thinly slice the red peppers and spring onions, and chop the parsley.Step 4.
In a large mixing bowl, combine the rice noodles, sliced red peppers, spring onions, crispy tofu, and parsley.Step 5.
For the dressing, whisk together soy sauce, lime juice, minced garlic, and a pinch of sugar, adjusting to taste.Step 6.
Pour the dressing over the salad and gently toss to combine.Step 7.
Garnish the salad with sesame seeds and nigella seeds just before serving.Step 8.
Chill in the refrigerator for 10 minutes before serving for an enhanced taste.
