Potato Salad with Feta Recipe
This creamy potato salad is a unique blend of textures and flavors, combining tender potatoes, crisp red onions, succulent mushrooms, tangy feta and fresh coriander. It’s the perfect side dish or light dinner.

METHOD
Step 1.
Peel then boil potatoes until tender then drain and let cool.Step 2.
While potatoes are boiling, sauté the mushrooms in a pan until browned.Step 3.
Once potatoes are done, drain and let cool. Then chop into smaller pieces.Step 4.
Peel and finely dice the red onion and chop the coriander.Step 5.
In a large bowl combine potatoes, mushrooms, onion, feta and coriander.Step 6.
In a separate bowl, whisk together mayonnaise, sour cream, vinegar, salt, and pepper to create a creamy dressing.Step 7.
Pour dressing over potato mixture and toss gently until all ingredients are coated.Step 8.
Refrigerate for at least an hour before serving.
