Potato Salad with Feta Recipe

This creamy potato salad is a unique blend of textures and flavors, combining tender potatoes, crisp red onions, succulent mushrooms, tangy feta and fresh coriander. It’s the perfect side dish or light dinner.

METHOD

  • Step 1.

    Peel then boil potatoes until tender then drain and let cool.
  • Step 2.

    While potatoes are boiling, sauté the mushrooms in a pan until browned.
  • Step 3.

    Once potatoes are done, drain and let cool. Then chop into smaller pieces.
  • Step 4.

    Peel and finely dice the red onion and chop the coriander.
  • Step 5.

    In a large bowl combine potatoes, mushrooms, onion, feta and coriander.
  • Step 6.

    In a separate bowl, whisk together mayonnaise, sour cream, vinegar, salt, and pepper to create a creamy dressing.
  • Step 7.

    Pour dressing over potato mixture and toss gently until all ingredients are coated.
  • Step 8.

    Refrigerate for at least an hour before serving.

  6. 100 mlMayonnaise

  7. 100 mlSour cream
