Fresh Sardine Salad Recipe

This fresh sardines and wild rocket salad is a light and nutritious dish that combines the rich flavours of sardines with the peppery taste of rocket (arugula).

METHOD

  • Step 1.

    Preheat a grill pan over medium-high heat.
  • Step 2.

    Season the sardines with salt, pepper, and a drizzle of olive oil.
  • Step 3.

    Grill the sardines for about 3-4 minutes per side, or until cooked through and nicely charred. Remove from the grill and set aside.
  • Step 4.

    In a large bowl, combine the rocket, cherry tomatoes, red onion, and olives.
  • Step 5.

    Mix together the lemon juice, olive oil, Dijon mustard, honey, salt, and black pepper to make the dressing.
  • Step 6.

    Flake the grilled sardines into bite-sized pieces and add them to the salad or leave them whole if preferred.
  • Step 7.

    Drizzle the dressing over the salad and toss to combine.

    Serve the fresh sardines and rocket salad immediately, garnished with freshly chopped parsley.
