Crispy Whitebait with Dill & Lemon Recipe

METHOD
Step 1.
Rinse the whitebait under cold water and pat dry with paper towels. Cut off heads if you prefer.Step 2.
In a bowl, mix flour with salt and pepper.Step 3.
Heat oil in a deep fryer or large pan to 180°C (350°F).Step 4.
Toss the whitebait in the flour mixture until well coated.Step 5.
Fry the whitebait in batches, being careful not to overcrowd the pan, for about 2-3 minutes, or until golden and crispy.Step 6.
Remove with a slotted spoon and drain on paper towels.Step 7.
Squeeze fresh lemon juice over the crispy whitebait before serving.Step 8.
Serve immediately with extra lemon wedges and a sprinkle of dill.
