METHOD

  • Step 1.

    Preheat the oven to 180°C (350°F) and grease a madeleine mould with butter or cooking spray.
  • Step 2.

    In a bowl, sift together the flour, cocoa powder and baking powder.
  • Step 3.

    In a separate bowl, whisk together the eggs and the sugar until pale and slightly thickened. Add the vanilla extract, salt and mix well.
  • Step 4.

    Gradually fold the dry ingredients into the wet ingredients until just combined. Then gently fold in the melted and cooled dark chocolate.
  • Step 5.

    Spoon the batter into the madeleine moulds, filling each about 3/4 full.
  • Step 6.

    Bake for 10-12 minutes, or until the madeleines are puffed and spring back when lightly touched.
  • Step 7.

    Remove from the oven and let the madeleines cool in the mould for a few minutes before transferring to a wire rack to cool completely.
  • Step 8.

    Dip each cooled madeleine halfway into the melted chocolate and then sprinkle with chopped hazelnuts. Place the dipped madeleines on a parchment-lined tray and let the chocolate set at room temperature or in the refrigerator.
  • Step 9.

    Serve the Chocolate Madeleines as a delightful and elegant treat. Enjoy!

  2. 2 tbspCocoa Powder

  3. 0.5 tspBaking Powder

  4. 113 gGranulated Sugar

  5. 2 Large Eggs

  6. 0.5 tspVanilla Extract

  7. 1 Pinch of Salt

  8. 85 gDark Chocolate (melted & cooled)

  9. 170 gDark Chocolate (for dipping)

  10. 100 gHazelnuts (chopped)
