METHOD
Step 1.
Preheat the oven to 180°C (350°F) and grease a madeleine mould with butter or cooking spray.Step 2.
In a bowl, sift together the flour, cocoa powder and baking powder.Step 3.
In a separate bowl, whisk together the eggs and the sugar until pale and slightly thickened. Add the vanilla extract, salt and mix well.Step 4.
Gradually fold the dry ingredients into the wet ingredients until just combined. Then gently fold in the melted and cooled dark chocolate.Step 5.
Spoon the batter into the madeleine moulds, filling each about 3/4 full.Step 6.
Bake for 10-12 minutes, or until the madeleines are puffed and spring back when lightly touched.Step 7.
Remove from the oven and let the madeleines cool in the mould for a few minutes before transferring to a wire rack to cool completely.Step 8.
Dip each cooled madeleine halfway into the melted chocolate and then sprinkle with chopped hazelnuts. Place the dipped madeleines on a parchment-lined tray and let the chocolate set at room temperature or in the refrigerator.Step 9.
