METHOD

  • Step 1.

    Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
  • Step 2.

    In a bowl, whisk together the flour, baking powder, ground ginger, cinnamon, and salt.
  • Step 3.

    In another bowl, beat the butter and brown sugar until creamy.
  • Step 4.

    Add the egg, syrup, and grated fresh ginger. Mix until well combined.
  • Step 5.

    Gradually add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  • Step 6.

    Fold in the chopped crystallized ginger.
  • Step 7.

    Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  • Step 8.

    Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
  • Step 9.

    Remove the muffins from the oven and let them cool in the tin for a few minutes before transferring to a wire rack to cool completely.
  • Step 10.

    Dust the ginger muffins with a little icing sugar. Serve and enjoy!
