Dark Chocolate Cake with Lavender Frosting Recipe

METHOD

  • Step 1.

    Preheat the oven to 180°C (350°F) and grease two 8-inch round cake pans and line the bottoms with parchment paper.
  • Step 2.

    In a mixing bowl, whisk together the flour, cocoa powder, granulated sugar, baking powder, baking soda and salt.
  • Step 3.

    In a separate bowl, whisk together the eggs, buttermilk, vegetable oil, vanilla extract until well combined.
  • Step 4.

    Pour the wet ingredients into the dry ingredients and mix until smooth. Gradually add 1 cup of hot water and mix until the batter is well combined.
  • Step 5.

    Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted into the centre of the cakes comes out clean.
  • Step 6.

    Remove from the oven and let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  • Step 7.

    For the Lavender Buttercream Frosting: In a saucepan, heat the milk until hot but not boiling. Remove from heat and add 2 tbsp of dried culinary lavender. Let steep for about 10 minutes, then strain and discard the lavender.
  • Step 8.

    In a mixing bowl, beat the unsalted butter until creamy and smooth while gradually adding the icing sugar, alternating with the lavender-infused milk, until the desired consistency is reached. Mix in the vanilla extract and salt.
  • Step 9.

    For Assembling: Place one cooled cake layer on a serving platter. Spread a generous layer of lavender buttercream frosting on top. Place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
  • Step 10.

    Decorate with fresh lavender blooms or grated dark chocolate if desired.
  • Step 11.
