Delicious Blackberry Sponge Cake Recipe

METHOD

  • Step 1.

    Preheat your oven to 180°C and grease a round baking tin.
  • Step 2.

    In a large mixing bowl, cream together the sugar and butter until pale and fluffy.
  • Step 3.

    Beat in the eggs one at a time, mixing well after each one.
  • Step 4.

    Gently fold in the flour, being careful not to knock out the air.
  • Step 5.

    Once combined, stir in the blackberries, reserving some for decoration.
  • Step 6.

    Pour the mixture into your prepared baking tin and spread out evenly.
  • Step 7.

    Bake in preheated oven for 25-30 minutes or until a skewer comes out clean.
  • Step 8.

    Allow the cake to cool in the tin before moving to a wire rack.
  • Step 9.

    Once the cake has fully cooled, dust with icing sugar and top with the remaining blackberries.
