METHOD
Step 1.
Preheat your oven to 180°C and grease a round baking tin.Step 2.
In a large mixing bowl, cream together the sugar and butter until pale and fluffy.Step 3.
Beat in the eggs one at a time, mixing well after each one.Step 4.
Gently fold in the flour, being careful not to knock out the air.Step 5.
Once combined, stir in the blackberries, reserving some for decoration.Step 6.
Pour the mixture into your prepared baking tin and spread out evenly.Step 7.
Bake in preheated oven for 25-30 minutes or until a skewer comes out clean.Step 8.
Allow the cake to cool in the tin before moving to a wire rack.Step 9.
Once the cake has fully cooled, dust with icing sugar and top with the remaining blackberries.
