METHOD
Step 1.
Begin by preheating your oven to 180°C and line a muffin tin with paper cases.Step 2.
In a large bowl, whisk together 2 eggs and 150g sugar until light and fluffy.Step 3.
Melt 100g unsalted butter and allow it to cool slightly, then stir it into the egg mixture.Step 4.
Gradually mix in 300g plain flour, 1 tsp baking powder, and 120ml milk until the batter is smooth.Step 5.
Gently fold in 50g desiccated coconut.Step 6.
Spoon the mixture into the prepared muffin cases, filling each three-quarters full.Step 7.
Bake for 20-25 minutes or until a skewer inserted into the centre comes out clean. Allow to cool on a wire rack.Step 8.
For the icing, beat together 150g icing sugar and 50ml coconut milk until smooth. Add the milk a little at a time until desired consistency it reached. Spread over each muffin once they are cooled.Step 9.
Finally, sprinkle over additional desiccated coconut flakes to decorate.
