METHOD

  • Step 1.

    Begin by preheating your oven to 180°C and line a muffin tin with paper cases.
  • Step 2.

    In a large bowl, whisk together 2 eggs and 150g sugar until light and fluffy.
  • Step 3.

    Melt 100g unsalted butter and allow it to cool slightly, then stir it into the egg mixture.
  • Step 4.

    Gradually mix in 300g plain flour, 1 tsp baking powder, and 120ml milk until the batter is smooth.
  • Step 5.

    Gently fold in 50g desiccated coconut.
  • Step 6.

    Spoon the mixture into the prepared muffin cases, filling each three-quarters full.
  • Step 7.

    Bake for 20-25 minutes or until a skewer inserted into the centre comes out clean. Allow to cool on a wire rack.
  • Step 8.

    For the icing, beat together 150g icing sugar and 50ml coconut milk until smooth. Add the milk a little at a time until desired consistency it reached. Spread over each muffin once they are cooled.
  • Step 9.

    Finally, sprinkle over additional desiccated coconut flakes to decorate.
