METHOD
Step 1.
Preheat your oven to 200°C. Prepare a muffin tin with liners or by lightly greasing the cups.Step 2.
In a large mixing bowl, combine wholemeal flour, baking powder, bicarbonate of soda, and salt. Stir thoroughly.Step 3.
In a separate bowl, whisk together the honey, eggs, Greek yoghurt, milk, and vanilla extract until well blended.Step 4.
Slowly add the wet ingredients into the dry, stirring gently and being careful not to overmix. The batter should be slightly lumpy.Step 5.
Gently fold in blueberries.Step 6.
Divide the batter equally among the muffin cups.Step 7.
Bake for 20-25 minutes, or until the tops are golden and a toothpick inserted into the centre comes out clean.Step 8.
Cool in the tin for 5 minutes, then move to a wire rack to cool completely. Serve fresh or store in an airtight container.
