Healthy Blueberry Muffins Recipe

METHOD

  • Step 1.

    Preheat your oven to 200°C. Prepare a muffin tin with liners or by lightly greasing the cups.
  • Step 2.

    In a large mixing bowl, combine wholemeal flour, baking powder, bicarbonate of soda, and salt. Stir thoroughly.
  • Step 3.

    In a separate bowl, whisk together the honey, eggs, Greek yoghurt, milk, and vanilla extract until well blended.
  • Step 4.

    Slowly add the wet ingredients into the dry, stirring gently and being careful not to overmix. The batter should be slightly lumpy.
  • Step 5.

    Gently fold in blueberries.
  • Step 6.

    Divide the batter equally among the muffin cups.
  • Step 7.

    Bake for 20-25 minutes, or until the tops are golden and a toothpick inserted into the centre comes out clean.
  • Step 8.

    Cool in the tin for 5 minutes, then move to a wire rack to cool completely. Serve fresh or store in an airtight container.

  8. 60 mlMilk

  9. 1 tspVanilla extract
